  2. Beat the yolks with the sugar and reserve the whites.

  1. Mount the whites to the point of snow with a few drops of lemon juice until hard.
  2. Line a springform pan 20 cm. with baking paper.

  1. Take to the oven and cook on low and high heat for about 35 minutes. When it is curdled, turn off the oven and let it cool inside, with the door ajar.
