How many cheesecakes have we already prepared in Bezzia? The cream cheese cake with red fruits and the traditional New York Cheesecake are some of them. And the list grows today with a new proposal: cheesecake with walnuts and butterscotch frosting. Do you dare to try it?

This cheesecake consists of a biscuit base, a cream cheese and walnut filling and a butter-based frosting and brown sugar. It is a simple cake that, however, requires waiting for each of the parts to cool before incorporating the next. The ideal is to prepare it a day before serving it, it wins with time!

Ingredients

For the base

  • 9 digestive cookies
  • 50 g. of butter.

For the cream cheese

  • 250 g. cream cheese at room temperature
  • 40 g. of sugar.
  • 1 teaspoon vanilla essence
  • 2 small eggs
  • 80 g. chopped walnuts

For the butterscotch

  • 60 g. butter at room temperature
  • 45 g. powdered brown sugar
  • 2 tablespoons of whole milk
  • 120 g. icing sugar
  • 1 tablespoon of vanilla essence

Step by step

  1. Lightly grease the mold (15-16 cm in diameter) and line it with greaseproof paper.
  2. Prepare the base crushing the cookies together with the melted butter until you get a paste. Place it in the bottom of the mold and press it with a spoon. Put in the fridge or freezer until it hardens.
  3. Beat the cheese with the sugar and the vanilla essence until obtaining a homogeneous cream.

Butterscotch cheesecake

  1. Then add the eggs one by one, beating after each addition until incorporated.
  2. Finally, add the walnuts and mix.
  3. Pour the mixture over the cookie base and take to the oven preheated to 190ºC for 40-45 minutes, or until needle stick comes out clean. So, take it out of the oven and let it cool.

Butterscotch cheesecake

  1. When the cake is warm, prepare the cover Mixing the butter, brown sugar and milk in a saucepan over medium heat. When it comes to a boil, remove from the heat and add the vanilla essence and icing sugar. Stir until you get a homogeneous cream.
  2. Once the cake is cold add the butterscotch frosting.
  3. Put the cheesecake in the fridge and let it cool down.
