Sweet potato stuffed with textured soy and mushrooms

It is not the first time that we prepare in Bezzia stuffed sweet potatoes. A little over two years ago we filled it with couscous and vegetables, Do you remember? Today we propose a new version with textured lame and mushrooms. A vegan recipe which lacks nothing.

We are not going to fool you, this recipe does not prepare in 10 minutes. Roasting the sweet potatoes in the oven takes approximately 50 minutes but in the microwave, as we prepare them today, it will not take you more than 15 minutes. Just enough time to prepare our filling. Do you dare to try it?

Ingredients

  • 2 medium sweet potatoes
  • 1 medium onion, minced
  • 100 g. mushrooms
  • 6 piquillo peppers in strips
  • 1 cup of textured soy
  • Black pepper
  • Sal Island
  • Spices to taste

Step by step

  1. Wash and dry the whole sweet potatoes, prick them with a fork and cook them in the microwave 14 min at maximum temperature.
  2. Put it soaked soy with hot water and let it hydrate for 15 minutes.
  3. Meanwhile, in a frying pan poach the onion with a drizzle of oil 4 minutes.
  4. Add the mushrooms and sauté until they take color.

  1. Next, add the peppers and the textured soybeans. Salt and pepper, add those spices that we like the most and skip the set 4 more minutes.
  2. Remove the sweet potatoes from the oven, perform a longitudinal cut at the top and open them slightly.
  3. Fill them with the mixture from the skillet and serve the hot stuffed sweet potatoes.
