These stuffed potatoes are very easy to prepare, although we cannot deny that they take time. A time in which we will have little more to do than take a look at the oven, but time at the end of the day. Now, the final flavor of these potatoes is well worth it.

You can use the cheese that you like the most to make this recipe. From blue cheese if you are looking for a more intense and genuine flavor to cream cheese to achieve a more subtle and smooth result. As for spinach, you can use both frozen and fresh or do without them. I have done it in one of the potatoes, although the amounts have been calculated so that the spinach covers both.

Ingredients

  • 2 large potatoes
  • 20 g. of butter
  • 3 tablespoons of cream
  • 3-4 tablespoons cream cheese
  • 200 g. spinach
  • Salt and pepper

Step by step

  1. Preheat oven to 220ºC.
  2. Prick the potatoes with a fork and put them in a pan lined with greaseproof paper. Bake them for an hour or something else, until they are tender.
  3. Then take them out of the oven and cut them in half lengthwise. Empty them, reserving the skin "bowls" on one side and the extracted meat in a bowl.
  4. Mix this meat with 15 g. of butter, the cream, the cheese and a pinch of salt and pepper and reserve.

Empty and prepare the filling

  1. Go back to the leather bowls. Place a small piece of the remaining butter in each one and bake 8 minutes to crisp. Once done, remove from the oven and reserve.
  2. Blanch the spinach now in a pot with water, introducing them when it has started to boil and removing them 20 seconds later. Then drain them to remove as much of the water as possible.

  1. Mix the spinach with the mashed potato and fill the skins with this mixture.
  2. Bake 15 minutes, until the surface is golden brown and then remove them from the oven.
