Potato and zucchini croquettes

We have hesitated to baptize these potato and zucchini croquettes which we propose today as croquettes, because although they have that characteristic rounded shape, they are battered and fried in oil, their dough is not linked with a traditional béchamel sauce.

These croquettes are much more simple and fast to make what the traditional ones. Forget about adding milk little by little and stirring until the dough takes on body. Here you will have to do little more than mix all the ingredients that are garlic, leek, potato, zucchini, cheese and some seasonings.

Do you dare to prepare these croquettes? They are great for enjoy as a starter or as part of an informal dinner with family and friends. We make them fried, but you can also cook them in the oven if you want to eliminate the fat from the frying. Can we get down to business?

Ingredients

  • 5 medium freshly cooked potatoes
  • 180 g. grated zucchini
  • 1 cheese
  • 1 garlic clove, minced
  • 1 small leek, chopped
  • A pinch of salt
  • Pinch of pepper
  • 1/2 teaspoon curry powder
  • Extra virgin olive oil
  • Egg
  • Bread crumbs

Step by step

  1. Place the grated bacín cala in a colander over a bowl to release water while you prepare the rest of the ingredients.
  2. In a frying pan heat a little olive oil and brown over low heat garlic and leek. Once done, reserve.
  3. Next, in a bowl, mash the potatoes peeled until pureed.
  4. Add the grated zucchini, the garlic and leek sauce, the cheese and the curry. Salt and pepper to taste and mix and then let it cool covered in the fridge for a minimum of two hours.

  1. After that time, with the help of two spoons or your hands, take portions of the dough and giving them a croquette shape.
  2. Pass each croquette for breadcrumbs, egg and breadcrumbs again. Place them as you make them on a plate so they rest until you do all of them.
  3. After fry them in plenty of oil heat in batches until golden brown. Do you prefer to make them in the oven? Place them on parchment paper and bake them for 15 minutes at 220ºC in the previously preheated oven.
