Refreshing bean or bean salad

This bean or bean saladIt is ideal to enjoy legumes at any time of the year, hot or cold. In addition, it is a great recipe to take to work in a tupper or camping.

Is a very nutritious dishor, packed with protein (from beans), vitamins (from raw vegetables), fiber, and carbohydrates. Thanks to this, we could eat it perfectly as a single dish if we wanted.

Ingredients:

(For 2 persons).

  • 200 gr. beans or black beans.
  • 3 tablespoons of sweet corn.
  • 1/2 purple onion.
  • 10 cherry tomatoes
  • 10 pitted black olives.
  • 1 small cucumber.
  • A handful of canons.
  • Olive oil.
  • Balsamic vinegar.
  • Salt

Preparing the pint bean salad:

With the beans, we have two options that we can choose. One is the quick way, which consists of preparing the salad with already cooked jarred beans. And the other option is to cook them ourselves.

If we want to cook them, a day before preparing the recipe or at least 8 hours before cooking the beans, we must put them to soak. To do this, we place them in a plate or container and cover them with cold water.

The next day, we heat plenty of water in a pot over high heat. When it starts to boil, add the drained beans that were soaked. We cook them until they are tender, about an hour should be ready. If we cook them with a pressure cooker, the cooking time will be 15-18 minutes. When they are tender, we remove them from the heat, drain them and wash them with water under the tap.

While the beans cool, let's go preparing the rest of the ingredients. We cut the onion very fine into julienne strips and add it to a large bowl or source where we will mix our salad. Cut the cherry tomatoes and pitted olives in half, and add them to the source. We peel the cucumber and cut it into small cubes that we will add to the mixture as well.

Finally we add the cold beans, along with the corn and a handful of lamb's lettuce. We mix everything very well and carefully, so that the legume does not crumble too much.

Finally, we dress the salad with balsamic vinegar, olive oil and salt to taste. We can consume it immediately if we want, although it is advisable to serve it cold. In case of consuming it later or the next day, we will not season it until the moment of tasting it.
