Hake with vegetables en papillote

The paper is a very healthy technique to cook fish, meat or vegetables, wrapping the ingredients in aluminum foil. Food is steamed in its own juices inside, without the need to add any fat.

Ingredients:

  • 2 hake fillets.
  • 1/2 zucchini.
  • 1 carrot
  • 1 Italian green pepper.
  • 1/2 onion.
  • The juice of half a lemon.
  • Salt and pepper.
  • Olive oil.

Preparation of hake with vegetables al papillote:

We cut a fairly long piece of aluminum foil, with which we can wrap the fish completely and also have a little left over. We place the aluminum foil on a smooth surface, horizontally in front of us and with the less shiny side facing up. We put a thread of fine olive oil on the paper to grease.

While we prepare everything, we turn on the oven at 180º C. temperature so that it warms up.

First, we will place the vegetables forming a mattress where the hake will rest. We have to cut them as finely as possible so that they cook at the same rate as the fish. If we want a thicker cut, we will have to previously sauté them in a pan before assembling the packages.

We grate the zucchini, with the help of a grater, on the paper to create the first layer. We remove the superficial skin of the carrot and make a second layer in the same way. Chop the onion very finely and place it on top. We make the last layer with the green pepper that we will also cut as finely as possible. We sprinkle a little salt to taste above.

We arrange the fish fillets on the vegetable mattress, sprinkle with lemon juice and season to taste. We close the package by wrapping everything with the aluminum foil and seal the open sides by rolling them up.

We introduce the package or paper in the oven and cook between 20 and 25 minutes at 180º C. To plate, we will discard the aluminum foil and we can add a thin thread of olive oil on top if we want.
