Canarian gofio mousse

There is a great variety of mousses, the Canary Islands have their own, gofio mousse And it's to die for. It is a soft dessert, not very sweet, and easy to prepare.

Gofio is a product made up of toasted cereal flour, usually wheat or millet. This dessert is a great way for children (and adults) to consume cereals and benefit from the nutritional properties that gofio gives them.

Ingredients:

  • 110 gr. Canarian gofio.
  • 600 ml. of whipping cream.
  • 150 gr. of condensed milk.
  • 30 ml. of whole milk.
  • 3 eggs.
  • Chopped toasted almonds (for garnish).

Preparation of the gofio mousse.

We will begin separating the yolks from the whites of the eggs, which we will place in two different bowls or containers.

In a large container, where we can comfortably beat, we put the yolks of the eggs and beat them. Add the condensed milk and beat both ingredients again.

Add the gofio and mix well, until we get a homogeneous texture. We will observe that the dough has thickened quite a bit, obtaining a kind of pasta. Now add the milk and mix again.

We mount the cream, in a separate container, helping us with an electric mixer. Add the cream to the gofio paste, little by little and with the help of a spatula. We will integrate it with soft and enveloping movements, to prevent the cream from falling.

As with cream, we mount the egg whites to the point of snow in a separate container. Subsequently, we incorporate it into the gofio in the same way, making enveloping and soft movements, from top to bottom.

Our gofio mousse would be ready by now. We only have to distribute it in glasses or individual glasses and decorate it if we want. We can decorate the mousse with pieces of toasted almonds on top, or we can simply sprinkle a little gofio. Before serving, We will refrigerate it in the fridge for a couple of hours, so that it takes more consistency and flavor.
