En Bezzia We were looking for a recipe with an important vegetable base and an attractive presentation for the next family dinners and we found it. These zucchini rolls with minced meat and cauliflower they combine both conditions and are delicious!
It is a recipe that you can easily adapt to a vegan diet substituting minced meat for a protein of vegetable origin such as tofu, textured soy or tempeh, among others. Thus, everyone can enjoy it.
You can still go further and make more changes. How? Substituting the zucchini for the eggplant or even combining rolls of both. Or choosing a cheese of your taste. We have opted for mozzarella, because we had it on hand, but you can play with other flavors or even add a bechamel with cheese.
Ingredients
- 1 medium zucchini
- Sal Island
- Freshly ground black pepper
- Extra virgin olive oil
- 1/2 onion, minced
- 180 g. minced meat
- 1/4 cooked cauliflower, chopped
- 30 g. grated cheese
- 6 tablespoons tomato sauce or fried tomato
- Mozzarella cheese
Step by step
- Remove the ends of the zucchini and with the help of a mandolin or a cheese cutter, laminate the zucchini until you have 11 sheets. Season the slices and reserve. Zucchini left over? Chop it to add it later to the sauce.
- Next, heat two tablespoons of extra virgin olive oil in a pan and sauté the onion and zucchini minced for five minutes. Season and cook 8 more minutes until tender.
- Continue preparing the filling adding the cooked cauliflower, grated cheese and 2 tablespoons of tomato. Mix and remove from heat, placing the filling in a colander.
- Now, in the same pan in which you have prepared the filling and that you will have cleaned with a piece of paper cook the zucchini slices on the grill until they start to be marked. As you cook them, spread them out on a surface, so you will have them ready to fill.
- Prepare an oven-safe or microwave-safe dish and spread the tomato at the base remaining.
- Now, prepare the rolls placing 2 level tablespoons of filling on each zucchini sheet and rolling these. You will think when making the first one that it is impossible for the filling not to come out but remember that it does not have to be perfect. Take the rolls to measures that you make them decisively and place them in the source vertically.
- Once all the rolls are finished, decorate with the remaining tablespoon of tomato, place pieces of mozzarella over these and take them to the microwave or oven so that the cheese melts.
- Serve the zucchini rolls with hot mince and cauliflower.
