White bean stew with prawns

The legume stews they are a great ally in the kitchen. They spread a lot and allow us to create numerous combinations taking advantage of what we have at home. This white bean and prawn stew is a great example and a great alternative to add to our menu.

Legume stews are simple to prepare but take time. A time that we can reduce by using canned cooked legumes. They are an excellent option, although it is preferable to wash them before adding them to the stew in order to remove excess salt.

This is how we have done it before combining our beans with the fried onion, prawns and tomato that we had prepared. A pot of beans like the one we have used can be enough to feed 4 people if the beans are served with a good fruit and vegetable salad.

Ingredients for 3/4

  • 3 tablespoons olive oil
  • 1 white onion
  • 1 garlic clove
  • 12 prawns
  • 2 tablespoons tomato sauce
  • 1 jar of cooked white beans of 570 g. (400 g. Net)
  • Sal Island
  • Fish broth or water

Step by step

  1. Put the olive oil in a saucepan and sauté the onion five minutes.
  2. Add the garlic and the prawns and sauté a few more minutes until the prawns take color.

  1. After add the tomato sauce and after mixing well, cook the whole for a couple of minutes.
  2. Before adding the beans, wash them under running cold water using a strainer. Once done, add them together with the broth (the necessary to cover) and cook for 6 minutes.
  3. Serve the white bean stew warm.
