Warm Salad of Sweet Potato and Chicken with Spinach

This warm sweet potato and chicken salad with spinach is one of the tastiest warm salads we have prepared in Bezzia. The sweet potato can be cooked in different ways, however, we encourage you to do it how we do it roasted and flavored with some spices. The sweet and spicy touch that it will add to the salad will take it to another level. Do you dare to prepare it with us?

Ingredients

For the sweet potato:

  • 1 sweet potato, peeled and diced 2 cm.
  • 1 tablespoon of extra virgin olive oil
  • Salt and pepper
  • 1 teaspoon of paprika

For the chicken:

  • 1/2 chicken breast diced
  • Salt and pepper
  • Garlic powder
  • 1 tablespoon olive oil

For the salad:

  • Manzana 1
  • 3 handfuls of spinach
  • A few cubes of fresh cheese
  • 12 cherry tomatoes
  • 1 boiled egg
  • Extra virgin olive oil

Step by step

  1. Place the sweet potato dice in a oven safe dish. Season, add the oil and the paprika and mix well until all the sweet potato cubes are soaked in the mixture.
  2. Bake in the oven, preheated to 220ºC, and cook for 35 minutes or until tender.
  3. Meanwhile, place the chopped spinach in a salad bowl.
  4. Also add the cherry tomatoes cut in half, the apple in cubes, the chopped boiled egg and a few pieces of fresh cheese.

  1. When the sweet potato is almost done prepare the chicken. Salt and pepper the chicken pieces, season with garlic powder and cook over high heat in a pan or griddle with a tablespoon of oil until golden brown.
  2. Add the chicken and sweet potato pieces to the salad and water with a drizzle of oil extra virgin.
