Tofu with rice and vegetables

El tofu with rice and vegetables that we propose today is a simple recipe to prepare and a great alternative to more traditional rice recipes. If you have never tried tofu, this is also a good way to do it and get used to its texture.

You can cook tofu in different ways in this recipe. We have opted for the iron but you could also do it in the oven to avoid excess fat. What we do not recommend modifying without trying first is the sauce that we propose, the key to this recipe.

Ingredients

  • 120 g. of rice
  • 275 g. firm tofu
  • 1 teaspoon soy sauce
  • 1 green bell pepper, minced
  • 1/2 red onion, minced
  • 1 cup broccoli flowers

For the sauce

  • 1/2 tablespoon of extra virgin olive oil
  • 1 garlic clove
  • 1 cayenne
  • 1/3 tablespoon of brown sugar
  • 1 tablespoon of Modena vinegar
  • 1/4 cup soy sauce
  • 1/8 cup of water
  • 1 tablespoon of cornstarch

Step by step

  1. Cook the rice following the manufacturer's instructions. Then refresh it and reserve.
  2. Cut the tofu into 0,5 cm strips. thick. Brush the surface of an iron with olive oil and cook the tofu until done and golden on both sides. When it is golden brown, add the soybeans and cook one more minute before removing it. Reservation.
  3. Put two cups of water in a wok or deep frying pan and when it is boiling add the vegetables: onion, bell pepper and broccoli. Let them cook for about 5 minutes so they are al dente. Remove the water and reserve the vegetables.

  1. For prepare the sauce, Start by browning the garlic in the oil. Add the cayenne, sugar, vinegar, and soy sauce and cook for about 5 minutes. In a glass, mix the water with the cornstarch and add it to the sauce. Cook, stirring occasionally, until thickened.
  2. Pour the sauce in the wok or pan and when it is hot add the vegetables, tofu and rice and cook for a couple of minutes or until the rice is hot.
