Are you looking for a different dessert? Today we want to propose a great dessert that has the sweet potato as its main ingredient. A sweet potato pie shared by nutritionist Itziar Cantera on her instagram that we want to encourage you to try. We have already tried it!
In addition to being a dessert that takes us out of the ordinary, it has in its favor both its list of ingredients and its simplicity. Our advice is that you prepare it a few hours before or even the day before if you prefer that your wet interior is more settled.
Ingredients
- 50g roasted sweet potato
- 50g pitted dates
- 4 eggs
- 50g oatmeal
- 30g of almond flour
- 1 sachet of backing powder
- 1/4 teaspoon cinnamon (optional)
Step by step
- For roast the sweet potatoes wash and place on a cookie sheet. Prick them with a fork and bake for 60 min. or until soft at 200ºC.
- Once the sweet potatoes are roasted and warm, cook hydrate dates in warm water 15 minutes.
- Then beat the eggs, sweet potato and dates.
- Add the flour of oats, almond flour, yeast and cinnamon and blend again until you get a homogeneous mixture.
- Pour the mixture into a silicone mold and take it to the preheated oven at 180ºC for 40-45 minutes.
- Take it out of the oven and let it warm slightly before removing it from the mold.
- Then wait for it to cool down to enjoy this sweet potato pie.
