Snowy eggs

The snowy eggs they are part of our traditional gastronomy. Also known as mole eggs, this sweet dessert has the egg as its main ingredient. It is a very soft dessert that combines a cream or custard made from egg yolks, with delicate meringue clouds.

The custards are lighter than the traditional ones and the meringue clouds float in them. Cooked in milk and sugar and flavored with cinnamon and lemon, they present a firm surface and an interior that melts in your mouth. It is a dessert that we can prepare in advance and reserve in the fridge until serving time.

Ingredients

For the clouds

  • 1 liter of milk
  • 150 g. of sugar
  • the skin of 1 lemon
  • 1 cinnamon stick
  • 5 claras

For custard

  • 5 yolks
  • 1 teaspoon cornstarch
  • 150 g. of sugar
  • 500 ml. milk + what we have left to cook the meringue

To decorate

  • ground cinnamon
  • 6 cookies

Step by step

  1. Cook the milk with lemon peel and cinnamon. Let it simmer for about 15 minutes.
  2. Meanwhile, mount the whites from egg to snow. Once they start to froth, add the sugar little by little, continuing to beat, until you get a shiny and firm meringue.

  1. After 15 minutes, remove the lemon peel and the cinnamon stick from the milk.
  2. Thomas tablespoons meringue and pour them into the milk - it is not necessary for them to pile up and stick together, do it little by little. Cook for 15 seconds on each side and remove with a slotted spoon. Reserve them on a plate.

  1. Once all the meringue clouds are cooked, strain the leftover milk and return it to the fire (medium-low).
  2. In a bowl beat the yolks with the sugar, cornstarch and half a liter of milk.
  3. Little by little, pour this mixture into the saucepan with the milk that you keep cooking. Stir the mixture with a few rods until thickened, between 10 and 20 minutes. Remove from heat and reserve.

  1. Place a cookie in the bottom of each bowl and on top of it, two or three meringue clouds. Cover them with the custard and decorate with more clouds and a little cinnamon powder.
  2. Let it be cool to room temperature and then put them in the fridge.
