Today we prepare in Bezzia A great dish with a long list of ingredients but very easy to prepare: Seitan with mushrooms and peas with potato garnish. A vegan proposal that the whole family can enjoy and a great alternative when you have guests.
This seitan with mushrooms and peas can become a great vegan party plate substituting the garnish that we propose today for a potato parmentier. Do you remember the recipe? We prepared it three Christmases ago, how time flies!
For the day to day we have chosen a simple garnish: some al dente pepper strips and some cooked potatoes to which we have passed to give them the final touch in the pan. Ingredients that are added to the vegetables that the main preparation has that I can assure you, it is delicious by itself!
Ingredients
- 3 tablespoons of extra virgin olive oil
- 1 garlic clove, peeled
- 200 g. mushrooms
- 1 cup frozen peas
- 550 g. seitan, in bite pieces
- 1 cup vegetable broth
- 1 teaspoon of cornstarch
- 1 teaspoon oregano
- 1/2 teaspoon of paprika
- A pinch of cumin
- Salt to taste
- Pepper to taste
- Green, red and yellow bell pepper sticks
- 2 medium potatoes cooked
Step by step
- Heat the oil in a large skillet and fry the clove of garlic.
- Then add the chopped mushrooms and fry for two minutes.
- It incorporates the frozen peas, mix and cook about 6 minutes.
- Then turn up the fire, add the seitan in pieces and mix well.
- While the seitan cooks mix in a cup broth, cornstarch, spices and condiments.
- Pour the mixture into the pan, stir, put a lid on and let the sauce reduce. Approximately 10 minutes.
- Meanwhile, sauté pepper sticks in a pan for 10 minutes. After the time has elapsed, she adds the peeled and diced potatoes, turns up the heat and allows them to lightly brown.
- Serve the seitan with mushrooms and peas with a garnish of peppers and potato.
