Roasted Cauliflower, Apple, and Canned Salmon Salad

Do you like warm salads? Today we propose one with a fantastic combination of ingredients. A roasted cauliflower salad, canned apple and salmon that is very tasty and that you can prepare at any time of the year.

We cannot describe it as a quick salad because roasting the cauliflower in the oven will take you approximately half an hour. This time we have done it in a simple way, with a little oil, salt, pepper and ground garlic, but if you especially like a certain spice, why not incorporate it?

The rest of the ingredients, among which are canned endives, apples and salmon, it is not necessary to cook them so you can add them at the last minute as well as the dressing, to which we have given a slight touch of mustard. Would you like to try it?

Ingredients for 2

  • 1 small cauliflower
  • Sal Island
  • Black pepper
  • Half a teaspoon of garlic powder
  • Olive oil
  • 2 apples
  • 2 purple endives
  • 160g. canned salmon fillets (net weight)
  • 1/2 teaspoon mustard
  • 1/2 teaspoon of honey

Step by step

  1. Cut the cauliflower in florets and place them in a bowl along with two tablespoons of oil, salt and pepper to taste, and garlic powder. Mix well so that they are well impregnated with the oil and take to the oven.
  2. Bake at 190ºC for 20 minutes and after that time check if the cauliflower needed a little more time to achieve the point you want.
  3. Meanwhile, go cleaning the endives, cutting them in half and separating their leaves.
  4. Cut into thin wedges apples, peeled or unpeeled, as you prefer.
  5. Next, place both the endive leaves, as well as the apple segments and the well drained flaked salmon in a fountain.
  6. Now prepare the dressing mixing three teaspoons of oil (which can be the salmon oil) with the mustard and honey.
  7. When the cauliflower is ready add it to the source, pour the year on top and mix well.
