With the arrival of good weather, the desire to put a fresh salad in your mouth increases. Furthermore, there are so many ingredients that we can play with to prepare them that getting bored with them is a utopia. This quinoa salad, strawberries and avocado that we propose today is just one of the many possibilities.
We have prepared different quinoa salads in Bezzia with apricots or pear, among other ingredients. Today we add one more to the list. A salad that you can have ready in 20 minutes and to which you can add other ingredients: vegetables, fresh fruits or nuts.
Ingredients
- 1 cup quinoa
- 3 cups of water
- 1/2 vegetable stock cube
- 1 ripe avocado
- 12 fresas
- 1 handful of cashews
- Extra virgin olive oil
- Balsamic vinegar
Step by step
- Wash the quinoa under running cold water.
- Then cook it following the instructions from the manufacturer, adding the stock cube to the boiling water to give it more flavor. It won't take you more than 10-12 minutes to do it.
- Next, spread the quinoa in a lined baking dish and bake it at 200ºC to dry slightly for 10 minutes. This step is optional; we like to do it to remove water.
- While the quinoa is cooking, take the opportunity to wash and chop the strawberries and avocado.
- Place them in a bowl and add the quinoa and cashews.
- Water with a drizzle of olive oil extra virgin and another of vinegar.
