Today we prepare in Bezzia a very complete dish: Potato and green bean stew with chickpeas. With this dish you will only need to incorporate a fruit as a dessert to complete your menu. And preparing it will be very simple, we guarantee it!
A casserole is all you need to prepare this stew. It will be in this one we will prepare a sauce first and then we will add the rest of the ingredients following an order, potatoes first, green beans and chickpeas later. You already have it!
In order to speed things up, we usually freeze the green beans already blanched, so that later, when they are removed, the cooking time is considerably reduced. If you are going to use them fresh, keep in mind that you will need a few more minutes for them to achieve the desired texture. Shall we start cooking?
Ingredients for 4
- 1 red onion, minced
- 1 green bell pepper, minced
- 2 small leeks, chopped
- 3 large potatoes
- 1/2 cup tablespoons crushed or grated tomato
- Vegetables soup
- 400g frozen blanched green beans
- 240 g. cooked chickpeas
- A pinch of sweet paprika
- Salt and pepper
- Olive oil
Step by step
- Put three tablespoons of oil in a pan and when it is hot, add the onion, the pepper and the chopped leeks. Pocha for 10 minutes or until vegetables are very tender.
- After add the mashed potatoes and fry for a couple more minutes, stirring frequently.
- Now add the crushed tomato and the vegetable broth so that it covers the potatoes generously.
- Season, mix and cook for 12 minutes with the lid on.
- Time passed, incorporate the green beans, the cooked chickpeas, the paprika and cook 8 more minutes or until the green beans are tender.
- Serve the Potato and Green Bean Stew with Chickpeas hot.
