Sometimes you don't choose what to cook. Circumstances force and one, two or three products about to go bad mark the course of what will be your least. This peach, avocado and salmon salad thus arises from the need to take advantage of these three ingredients.
Salads are a great resource to take advantage of leftover ripe vegetables and fruits. But legumes, meat and fish can also be integrated into them. In this case, it was two salmon fillets that we used as a culmination. We could have added them raw with a little lemon, but someone would have protested.
If you like raw fish, you can add raw salmon, as we are going to propose in step by step. If you are not a fan or you cook for someone who is not, take the second path with us. One and the other provides you with a light and fresh proposals, perfect for these hot days.
Ingredients for 2
- 2 peaches
- 1 Avocado
- 2 salmon fillets
- 1/2 white onion, minced
- 1 teaspoon soy sauce
- 1 teaspoon of olive oil
- Juice of half a lemon (for the raw option)
- Sal Island
- Pepper
Step by step
- Dice the salmon and mix them in a bowl with the onion, soy sauce, olive oil, a pinch of salt and a pinch of pepper. If you are going to serve it raw, also add the lemon juice and mix.
- Then peel and dice the peach. They will serve as the base for the two servings of salad that you will prepare using two rings to plate.
- Place the peach on the base inside the rings for plating and on this the avocado, also diced. Press lightly with your fingers.
- Finally place the salmon on these that you have reserved in a bowl. Do you want to cook it? Heat a pan or griddle and cook the salmon for a minute, stirring constantly. Now if you put it on top.
