It is in summer when we most often resort to this type of preparation, but there are great alternatives to incorporate them into our menu also in winter. La orange salad with goat cheese It is an excellent alternative even in the coldest time of year because it is served warm. Both the pumpkin and the sweet potato, in charge of giving that characteristic orange color to the salad, are roasted and served warm, mixed with the rest of the ingredients.

It is a salad that is prepared in a simple way and that we can serve as a starter or turn into a single dish adding chickpeas or beans white canned to it. It also works great with a cup of rice or pasta. Do you dare to prepare it?

Ingredients for 2

  • 1 sweet potato
  • 200 g. pumpkin
  • 2 handfuls of spinach
  • 1 Avocado
  • 12 cherry tomatoes
  • 55 g. goat cheese
  • 1/2 teaspoon cinnamon
  • 1/3 teaspoon curry
  • Salt and pepper
  • Extra virgin olive oil

Step by step

  1. Cut the pumpkin and sweet potato, once peeled, into cubes of the same size. Place them in a baking dish lined with parchment paper and Roast them at 200ºC for 20 minutes or until tender. Afterwards, season with cinnamon and curry and mix.
  2. Now, put the spinach in a bowl, the cherrys cut in half, the crumbled goat cheese and the avocado.
  3. Incorporate the pumpkin and the sweet potato, mix and dress with a little extra virgin olive oil.
  4. Serve the orange salad with warm goat cheese.
