A brownie is a chocolate cake small, typical of the gastronomy of the United States. Egg, cocoa and chocolate are common ingredients of this cake, of which, however, we can find numerous versions. This carrot brownie that we encourage you to prepare today is just one more.

This brownie unlike others it does not contain sugar among its ingredients. Carrots and dates are responsible for adding the sweet spot to this preparation and counteracting the bitterness of chocolate and pure cocoa. If like us you are a lover of the purest chocolates, you will like this version. If, on the other hand, you are not very fond of them, we advise you to choose a chocolate with 70% cocoa and not 90% as we have done.

This brownie is especially convenient to prepare. Why? Because you will only need a container to mix the ingredients and a hit of microwave to cook it. You can prepare it in the oven, but it is interesting to have this other resource for when we are more tight on time, don't you think? Do you like brownies? Do not stop try this with caramel.

Ingredients

  • 90g. pitted dates
  • 150g. peeled raw carrot
  • 2 eggs
  • 55g. ripe avocado
  • 30g. cocoa
  • 30g. dark chocolate (90% cocoa) melted
  • A handful of chopped cashews

Step by step

  1. Soak the dates in a bowl with hot water for 10 minutes
  2. After 10 minutes drain and crush the dates together with the crushed carrot, eggs, avocado, cocoa and melted chocolate until a homogeneous mass is obtained.
  3. Add the cashews to the dough and mix.

Microwave carrot brownie

  1. Put the dough in a mold 19 × 19 centimeters, approximately, whose base you will have lined with greaseproof paper
  2. Take the mold to the microwave and cook at maximum power for 6 minutes.
  3. Check if it is already done and if so, remove it from the microwave and let it temper slightly at room temperature.
  4. Serve the carrot brownie on its own, with a few pieces of fruit or a scoop of ice cream.
