Half an hour, it won't take you another minute to prepare this zucchini, which you will then have to marinate in the fridge at least 4 hours so that it takes all the flavor of the mint, garlic and chilli. My advice is that you prepare it at night, so you can have it the next day.

If you want to present it as we have done in Bezzia as a salad, you will only have to add some almonds, pistachios or pine nuts chopped and a few mint leaves, it's that easy! Give it a try and let yourself be surprised with its flavor.

Ingredients

  • 1 medium zucchini
  • Sal Island
  • 4 tablespoons of oil
  • 1 clove of minced garlic
  • 3 tablespoons vinegar
  • 10 mint leaves
  • Pepper
  • 1 cayenne chilli
  • Chopped almonds

Step by step

  1. Cut the zucchini into very thin strips with the mandolin.
  2. Place them in a colander and sprinkle a little salt over them. let them rest for 15 minutes to release the water.

  1. Meanwhile, prepare the marinade Mixing in a bowl the oil, garlic, vinegar, 5 mint leaves, salt and pepper to taste and a cayenne chilli that you can chop if you want it to be more spicy as we have done in Bezzia. Then beat until the mixture emulsifies and set aside.
  2. Now dried zucchini and layer it in a tumper as seen in the following image.
  3. Drizzle it with the marinade, close the tupperware, shake it horizontally so that the marinade gets between the zucchini layers and then let it rest for a minimum of 4 hours in the fridge (better all night).
  4. Then serve the marinated zucchini on a plate with some chopped almonds and some mint leaves.
