We are not sure if this is a lentil stew with vegetables or a vegetable stew with lentils. And it is that we have incorporated into it a significant amount of vegetables among which we find onion, pepper, carrot, cauliflower, zucchini and tomato, as well as potato.

As you will see in the photo, we have also opted to give prominence to vegetables by cutting them roughly. But always you can chop them more if you want to hide them from the little ones, for example, or even crush them before adding the lentils. Will you dare to cook it?

Ingredients for 4

  • 3 tablespoons of oil
  • 1 chopped onion
  • 1/2 red bell pepper, chopped
  • 2 carrots, peeled and thickly sliced
  • 1/2 large zucchini, in pieces
  • 1/2 cauliflower, in florets
  • A pinch of grated ginger
  • A pinch of turmeric
  • A pinch of cumin
  • 180 g. lentils
  • 1 potato, peeled and chopped
  • Vegetables soup
  • 2 tablespoons tomato sauce
  • A pinch of salt
  • A pinch of hot paprika

Step by step

  1. Start by heating the oil in a pan to fry the onion and pepper for 4 minutes.
  2. Then stir in the ginger, turmeric and cumin and mix before adding the rest of the vegetables: carrot, zucchini and cauliflower.

  1. Sauté the vegetables for 5 minutes and then add the rest of the ingredients. Keep in mind that the vegetable broth should generously cover the vegetables.
  2. Bring to a boil and then lower the heat to cook for 30 minutes or until lentils and potatoes are tender.
  3. Then you will only have to let the lentils with zucchini, cauliflower and carrot rest for a few minutes to serve them.
