The key to this cream is undoubtedly the combination of ingredients. The pear gives the cream a sweet touch Fantastic without downplaying the leek. The balance between the two is fantastic, although you can play with the amounts to enhance one or the other and make it to your liking.

Ingredients for 3

  • Extra virgin olive oil
  • 1 / 2 cebolla
  • 5 leeks
  • 1 potato
  • Sal Island
  • 2 pears
  • Water or vegetable broth

Step by step

  1. Prepare the vegetables. Cut the onion into thick pieces and the leek into thick slices including part of the green.
  2. In a saucepan, heat a couple of tablespoons of olive oil and sauté the onion and leek 5 minutes.
  3. Then add the potato, peeled and in pieces, and sauté for another minute while stirring.

Leek and pear cream

  1. Salt and pepper, pour water or broth until the vegetables are covered and cook for 10 minutes.
  2. After time, add the peeled and chunky pears and cook for another 10 minutes.
  3. Mash the mixture and serve the hot pear and leek cream with some fried leek strips.
