We were looking for a recipe that would allow us to present hake in a different way, combined with new flavors, and we found orange to be our best ally. This citrus not only provides a different flavor to hake, but with it we also incorporate color to the plate.

Ingredients

  • 3 hake fillets
  • 2 sliced ​​garlic cloves
  • 1 chopped onion
  • 200 g carrots, peeled and chopped
  • 3-4 oranges
  • 25 g. of butter
  • 1 pinch of pepper
  • 1 pinch of salt
  • Olive oil

Step by step

  1. Cut one of the oranges into thin slices. Fry it in a pan with a few drops of oil. Reservation.
  2. In the same pan, put three tablespoons of olive oil. Add the sliced ​​garlic cloves and onion and sauté for 3-4 minutes, until the onion changes color.

  1. Add the carrot and cook the whole over medium heat for 15 to 20 minutes.
  2. Add the juice of 2 oranges to the sauce and everything goes through Chinese. Put the heat on low and let the ingredients combine until they form a thick but manageable cream. If it were necessary to lighten it, add more orange juice. Rectify the salt.

  1. Pre-heat the oven at 200 ° C for 10 minutes.
  2. Bake the hake loins seasoned and topped with a knob of butter for 8 minutes.
