  • 2 tablespoons of extra virgin olive oil
  • 12 almonds
  • 2 cloves of garlic
  • 1 chopped onion
  • 1 teaspoon of flour
  • 1/3 of teaspoon of sweet paprika
  • A splash of white wine
  • 1 glass of fish broth
  • 5-6 strands of saffron

Step by step

  1. Heat the oil in a low saucepan and brown a clove of garlic peeled and almonds. Once golden brown, remove from the pan and reserve.
  2. In the same pot, sauté the onion the remaining garlic clove finely minced for about 5 minutes.
  3. Then add the flour and sauté a minute so that later it is not indigestible.
  4. Then add the paprika, white wine and fish stock. Bring to a boil and then cook over medium-low heat a few minutes while you prepare the mash.

  1. Prepare the mash placing in a mortar the almonds and the garlic clove that you have reserved, the saffron, a pinch of salt and a little parsley. Work until you get a paste, incorporating a little of the fish stock from the casserole.
