It will only take you 25 minutes to prepare this dish whose key is in the sauce. A sauce that has almonds and saffron as its main ingredients. The first ones must be natural, since we will toast them to make a mash based on almonds, garlic and saffron.

Ingredients
- 2 tablespoons of extra virgin olive oil
- 12 almonds
- 2 cloves of garlic
- 1 chopped onion
- 1 teaspoon of flour
- 1/3 of teaspoon of sweet paprika
- A splash of white wine
- 1 glass of fish broth
- 5-6 strands of saffron
- Sal Island
- Black pepper
- Fresh parsley
- 4 hake loins or slices
Step by step
- Heat the oil in a low saucepan and brown a clove of garlic peeled and almonds. Once golden brown, remove from the pan and reserve.
- In the same pot, sauté the onion the remaining garlic clove finely minced for about 5 minutes.
- Then add the flour and sauté a minute so that later it is not indigestible.
- Then add the paprika, white wine and fish stock. Bring to a boil and then cook over medium-low heat a few minutes while you prepare the mash.
- Prepare the mash placing in a mortar the almonds and the garlic clove that you have reserved, the saffron, a pinch of salt and a little parsley. Work until you get a paste, incorporating a little of the fish stock from the casserole.
- Then add the mash to the casserole and let it boil for one or two minutes before add the hake fillets seasoned. Cook over low heat for a couple of minutes and then turn them over to finish cooking.
- Serve the hake in hot almond sauce.
