Do you remember the broccoli pesto What did we propose last week to accompany a pasta dish? Today we use it again to complete this simple fresh cheese salad and tomato. A salad of use in which we have used everything that should be used from the fridge.

When we prepare the macaroni with broccoli pesto, we store what is left over in an airtight container. The next day we prepare this refreshing and flavorful salad. A different salad in which you may be surprised by the presence of chilli peppers. However, you should not be scared, these are chillies from Ibarra, chillies with a very mild spice, perfect for this type of preparation.

Ingredients

  • 1 handful of spinach leaves
  • 2 ripe tomatoes
  • 200g. fresh cheese
  • 3 teaspoons of broccoli pesto
  • 2/3 piparrak or chillies from Ibarra
  • Extra virgin olive oil

Step by step

  1. We place the spinach on a platter.
  2. We add the tomato and sliced ​​fresh cheese.
  3. We also add the broccoli pesto and chilli peppers.
  4. Season with a splash of olive oil extra virgin and we serve the salad of fresh cheese, tomato and pesto.
