Crispy rice salad with peanuts

There are many days when I have a little cooked rice reserved in the fridge helps us a lot when preparing food. Days in which we are in a hurry from here to there but in which we do not want or should not give up eating healthy.

This crispy rice salad with peanuts is perfect for such days. You only need a frying pan to prepare it and 15 minutes of your time; or maybe 20. As a result, you will have on the table a plate that you can eat both hot and cold and that can become a great alternative as a starter or dinner.

Ingredients

  • 1 chopped onion
  • 1/2 red bell pepper (from roasting), chopped
  • 1 cup of cooked rice
  • 2 handful of lettuce leaves
  • 4 handfuls of fresh spinach
  • 1 handful of natural peanuts
  • 2 tablespoons soy sauce
  • 1 tablespoon vinegar
  • 1 tablespoon oil
  • 1 dash of lime

Step by step

  1. Heat a tablespoon of oil in a frying pan and sauté the onion and the pepper for 10 minutes, until they change color.
  2. After add the rice and mix. Once all the ingredients are well mixed, lightly mash the rice with the spoon or spatula you are using. Put a cloth over the pan to absorb the vapors and cook over medium heat for 5 minutes until the rice is golden brown and crisp. You can repeat the operation if it is not crisp enough.

  1. Remove the pan from the heat and let it rest while you prepare the vinaigrette, mixing the soy sauce, vinegar, oil and lime in a bowl.
  2. To finish mix in a bowl or salad bowl with green leaves, rice, peanuts and vinaigrette.
  3. Serve the rice salad.
