Bake some cookies it becomes a great weekend plan. Even more so when they are as simple as the ones we propose today; coffee and chocolate cookies. You can spend a pleasant time preparing them and also enjoy a delicious homemade sweet snack at snack time.
Coffee and chocolate; en Bezzia We love this duo of flavors. They don't have an intense coffee flavor, but this gives them a very special touch. Like chocolate, which in addition to another flavor, adds another texture to the equation. If you like crunchy cookies on the outside, try them!
Ingredients
- 2 g. instant coffee
- 8 ml. boiling water
- 113 g. butter at room temperature
- 40 g. icing sugar
- 1 / 3 teaspoon vanilla extract
- 1 / 6 salt teaspoon
- 125 g. all-purpose flour
- 55 g. chopped dark chocolate or chocolate chips
Step by step
- Dissolve the coffee in the boiling water and let it cool.
- Beat the butter with the sugar until smooth.
- Add the vanilla, the coffee and the salt and beat again until they are fully integrated.
- Then gradually incorporate the sifted flour and mix with a spatula or wooden spoon until just blended.
- To finish add the chocolate. Mix what is necessary to integrate it; the excess should not be kneaded.
- Place the dough between two pieces of plastic wrap and roll it out into a rectangle about 6mm thick. Wrap the dough well and take it to the fridge at least 2 hours.
- Pre-heat the oven at 180ºC and line a baking tray with greaseproof paper or a silicone mat.
- Take the dough out of the fridge and onto a board cut the dough into squares to form the cookies. Place them on the tray and pierce them with the fork.
- Bake 16-20 minutes until the cookies take on some color. Then take them out and let them cool on a wire rack.
