Cod with mustard on green beans

We finish the week in Bezzia preparing a very simple recipe: cod with mustard about green beans. A healthy and light recipe, ideal to complete your weekly menu, don't you think? Also preparing it will not take up much time in the kitchen.

Today we present you two recipes in one. On the one hand some green beans with onion that can be served as an accompaniment to many dishes and that you can prepare in advance. On the other hand, the cod, cooked in the oven with mustard. Don't feel like trying it?

Ingredients

  • 400 g. green beans
  • 1 garlic clove, minced
  • 1 white onion, minced
  • 4 cod fillets
  • Extra virgin olive oil

For the mustard sauce

  • 2 tablespoons of honey
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons of white wine
  • 3 tablespoons of virgin olive oil
  • 1 tablespoon old-fashioned mustard
  • Salt to taste
  • Ground black pepper to taste

Step by step

  1. Wash the green beans, remove the tips and cut them into two or three pieces.
  2. Cook the green beans in water or steam until tender.
  3. Meanwhile, sauté the onion and the garlic in a frying pan, with a drizzle of extra virgin olive oil.
  4. When the onion takes color, add the beans greens and sauté for a few minutes.

Cod with mustard on green beans

  1. On the other hand, cook the cod. Place the tenderloins on a cookie sheet, cover the tray with plastic wrap and cook on high until done. You can make them the same way in the microwave.
  2. Meanwhile, prepare the sauce of mustard mixing first the honey, the wine and the vinegar, until the honey is diluted. Then, add the rest of the ingredients and mix with a few rods.
  3. When the cod fillets are done, uncover them and pour the sauce above. Bake a couple more minutes at a low temperature.
  4. Assemble the plate by placing a bed of green beans in a platter and on top of it the cod fillets. Drizzle with the sauce and serve.
