En Bezzia nos gusta tomarnos un café a media tarde con un trozo de bizcocho, plum cake o bundt cake. Y aunque tenemos un par de clásicos a los que siempre volvemos antes o después, procuramos probar nuevas recetas. Recetas como la de este cinnamon plum cake with pieces of date and pistachio.

Ingredients

  • 230 g. oatmeal
  • 55 g. almond flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon of baking powder
  • A pinch of salt
  • 160 ml. water at room temperature
  • 125 ml. almond drink (you can put the one you like the most or milk)
  • 3 tablespoons olive oil
  • 40 g. panela
  • 50 g. of honey
  • 65 gr of pitted dates
  • 1 handful of pistachios, peeled

Step by step

  1. Pre-heat the oven at 180ºC and grease or line a mold.
  2. Soak dates in hot water.
  3. Sift the flour oatmeal and mix it with the almond flour, baking soda, baking powder, cinnamon and a pinch of salt.
  4. In another bowl beat the sugar, honey, almond drink, water, and olive oil, until everything is integrated.
  5. Then add the dry ingredients to the wet and mix.

Cinnamon plum cake

  1. In conclusion, incorporate the dates drained and chopped and the pistachios and mix.
  2. Pour the mixture into the mold and bake for 45 minutes or until when punctured with a knife it comes out clean.
  3. Remove from the oven, wait 10 minutes to unmold on a rack and let it cool completely.
