Quinoa batter is a good alternative to traditional batter. Substitute refined flour for quinoa and provide a touch very crunchy to the chicken or to that preparation in which you decide to use it, once it is baked. Do you dare to try it?

Ingredients

  • 600g. chicken breast
  • 200g. quinoa
  • 100g. grated Parmesan cheese
  • 1 tablespoon of oregano
  • 1 teaspoon cumin
  • 1 teaspoon of paprika
  • 2 eggs

  • Freshly ground black pepper
  • Extra virgin olive oil

Step by step

  1. Cook the quinoa following the manufacturer's instructions for 12-14 minutes.
  2. Meanwhile, cut the chicken In thick strips, season and reserve.
  3. Pre-heat the oven at 180ºC and line the tray with parchment paper.
  4. Once the quinoa is cooked, drain it well and spread it out on the tray oven with the help of your hands. Bake 15-20 minutes, until it begins to have a crisp texture.

  1. Mix in a bowl quinoa with parmesan cheese, oregano, cumin, paprika, a pinch of salt and pepper.
  2. In another bowl, beat the eggs.
  3. Pass the chicken strips through the egg and then through the quinoa batter. Then place them on the parchment-lined cookie sheet.

  1. Bake at 180ºC topped with a pinch of extra virgin olive oil, about 15 minutes or until the chicken is done and the batter turns golden brown.
