En Bezzia we love curry. A year ago at this time we were preparing a chicken and sweet potato curry, you remember? A fantastic dish for this time of year. Today we present again the Chicken curry but we do it differently and choosing a new accompaniment-
The chicken curry that we propose today can be combined with a cup of rice, some cooked chickpeas or, as we have done in this case, with boiled broccoli. It is a dish that will fill your kitchen with aromas, which provide each of the spices that are among its ingredients.
Ingredients for 2-3
- 470 g of chopped chicken
- 2 Bay leaves
- 1/2 cinnamon stick
- One onion, julienned
- Two tablespoons garlic paste
- A teaspoon of turmeric
- One teaspoon of ground cumin
- One teaspoon curry powder
- A cayenne pepper
- 3 natural tomatoes (canned?
- 150 ml. coconut milk
- Extra virgin olive oil
- Boiled broccoli
Step by step
- Put a saucepan with an olive oil base and when it is hot add the bay leaf and cinnamon.
- Then add the onion and fry a few minutes until it changes color.
- So, add the garlic paste and fry one more minute.
- Next incorporate the spices powder and a little water and mix.
- Add the chicken pieces and cook over high heat for 6 minutes.
- After add the tomatoes, mix well and cook with the pan covered for about 8-10 minutes.
- Finally add the coconut milk, stir and cook for a few minutes so that the sauce plumps up a little.
- Serve the chicken curry with the boiled broccoli.
