El Carrot cake and nuts that today we encourage you to prepare is very simple. All you have to do is mix all the ingredients with an electric mixer before baking. Afterwards, the oven will do its magic. Remember that each one does it in their own way so you may have to adjust temperature or times.

Ingredients

  • 115 g. brown sugar
  • 75 g. butter at room temperature.
  • 3 eggs
  • 175 g. grated carrot
  • 90 ml. of buttermilk (90 ml. of milk with a splash of lemon juice).
  • 225 g. spelled flour
  • 2 tablespoons baking powder
  • A teaspoon of ground cinnamon
  • 40 g. walnuts

Step by step

  1. Prepare the buttermilk adding a splash of lemon juice to the milk. Stir and let it rest for about 10 minutes until it cuts.
  2. Meanwhile, beat the butter with the sugar until a fluffy mixture is obtained.
  3. Add the eggs one by one, beating after each addition to integrate well.
  4. Now, add the carrots grated and the buttermilk. Mix again until you get a homogeneous dough.

  1. Mix the flour with the yeast and cinnamon and sift them before adding them to the butter mixture. Mix with a spatula to homogenize.
  2. Finally, it incorporates the nuts and stir again. Reserve a few to place over the dough.
  3. Finally, pour the mixture into a mold and bake, in a oven preheated to 180ºC, about 45 minutes approx.
