This month we are preparing many recipes with pumpkin; recently we prepared meatballs in pumpkin sauce, do you remember? And it is that this vegetable is in season and serves both to prepare salty and sweet recipes. Another important ingredient in the recipe is raisins, which you could substitute for blueberries or another dehydrated red fruit, to thus add an acid touch to the recipe.

Ingredients

  • 2 cups of flour
  • 1 tablespoon of baking powder
  • 1 / 2 teaspoon salt
  • 3 / 4 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 6 tablespoons of panela
  • 90 g. very cold butter, diced
  • 1 cup raisins
  • 1 egg L
  • ½ cup mashed roasted pumpkin

Step by step

  1. Pre-heat the oven at 220 ° C and line a tray with greaseproof paper.
  2. In a bowl sift the flour and mix it with the baking powder, salt, cinnamon, nutmeg, ginger and brown sugar.
  3. Now, add the butter and either with the help of a stirrup or by pinching the mixture with the tips of your fingers, mix the ingredients until you get a sandy mixture. Don't knead, just pinch, so the temperature of the mixture doesn't rise.
  4. Then incorporate the raisins and mix.

  1. In conclusion, mix the egg with the pumpkin puree in a bowl and then add them to the dough. Mix until the dry ingredients have absorbed the moisture. Do not knead, the dough should be lumpy and brittle.
  2. Put the dough on a floured surface, sprinkle a little flour on it and with your hands press to give it a disk shape about 18-20 centimeters in diameter.
  3. With a knife, cut the dough into 8 triangles, as if it were a pizza, and transfer each piece to the previously lined tray.
