Wind fritters can be eaten simply battered in sugar, but they are filled as they are most consumed. May fill with pastry cream, chocolate cream, cream or fruit preserves, among many other options. Don't you want to try them?
Ingredients
- 75 g. Of flour
- 5 g. chemical yeast
- 2 g. of salt
- 125 ml of water
- 25 g. of butter
- 1 lemon peel
- 2 eggs
- 350 ml. of oil
- 30 g. of sugar
Step by step
- Mix the flour with the yeast and reserve.
- In a saucepan for the water, butter, lemon peel and salt. When it comes to a boil, remove the lemon peel and add the flour mixture all at once. Stir until you get a thick dough and remove from fire. Let stand five minutes.
- After five minutes add the eggs one by one, stirring after each addition until the mixture thickens again.
- With the help of two spoons form into balls and fry them over medium heat in a frying pan with plenty of oil (they should float). Do them in batches; the dough grows a lot in the pan and should not stick together.
- When the fritters are well browned - you will check that they turn themselves over - take them out and place them on absorbent paper.
- Followed and without wasting time, roll them in sugar. If they stay cold the sugar will not stick.
- Let them cool and serve.
