Step by step

  1. Prepare the broth; you can leave it done the day before. To do this, put the olive oil in a saucepan and when it is hot, add the vegetables. Brown them for a few minutes and then do the same with the meat. Once the meat is sealed, add the bay leaf to the casserole, season and cover with water. When the broth begins to boil, defatter with a slotted spoon and repeat the operation if necessary later. Cook with the casserole covered 3 hours or until the meat is done. Use the pressure cooker if you want to save time.
  2. Once the meat is tender, remove it and let it temper. Strain the broth and store it in an airtight container. Take advantage of the minced vegetables to make a soup for dinner.
  3. Shred the meat and reserve.
  4. In a low saucepan, heat 3-4 tablespoons of olive oil and sauté the onion and the carrot.
