  • 1 glass of couscous.
  • 3 tablespoons of sweet corn.
  • 1 small cucumber.
  • 1/2 small onion.
  • 10 pitted black olives.
  • 1 tomato.
  • 1/2 green pepper.
  • 1 teaspoon of ground cumin.
  • A pinch of sweet paprika.
  • The juice of half a lemon.
  • Virgin olive oil.
  • Salt

Preparation of the couscous salad with vegetables:

For the preparation of the couscous, with a glass we will take a measure of it and put it in a large bowl. We add in turn a thread of oil and a pinch of salt. What we will need of water is a little more than the measure taken of couscous. In this case, a glass and a half of water would be the right thing to do.

We heat the measure of water, either in a saucepan over the fire or in the microwave. Pour the hot water into the bowl with the couscous and stir. We let it rest until all the water has been absorbed, swollen and tender.

Meanwhile, we cut all the vegetables and we put them in a source, where we will make our salad. Peel the tomato and cucumber and we cut them into cubes. We remove the stem and the seeds of the pepper and cut it in the same way. We will chop the onion as small as possible, or we can also cut it into fine julienne strips if we like.

We also add a few spoons of sweet corn grains and the black olives to the source. The olives can be cut into slices or incorporated whole. We add the cous-cous that we had reserved in the source, which should be ready and mix.

Finally, we are going to season the salad and give it some flavor. Add the cumin, paprika, lemon juice and a pinch of salt to taste. We remove everything well and we incorporate the olive oil. We mix again and cool the salad in the refrigerator to serve it cold.
