Ingredients for 2

  • Extra virgin olive oil
  • 1 sweet potato
  • 1 glass of quinoa
  • 1 teaspoon garlic powder
  • Salt and pepper
  • 1 Avocado
  • 2 apples
  • A handful of raspberries
  • A few pieces of mozzarella
  • 1 natural yogurt

Step by step

  1. Preheat oven to 200ºC.
  2. Peel the sweet potato and cut it into 2-centimeter cubes. Place them on the baking sheet, brush them with a little oil and bake for 20 minutes or until tender.
  3. While the sweet potato is roasting, wash the quinoa under the stream of cold water and then, well drained, toast it in a saucepan to remove the rest of the moisture.
  4. Once dry, add salt, salt, pepper, garlic powder and water to the saucepan and cook according to manufacturer's instructions. Don't have the instructions? Add water in the right proportion (1 quinoa: 1,5 water) and once it boils, cover the saucepan and cook for 15 minutes.
