The weekend is time to prepare rice in many houses, is it also in yours? Although circumstances are now anything but normal, in Bezzia We wanted to continue with this routine also during this quarantine preparing this rice with cuttlefish (or squid).

Preparing this rice does not involve any complications. You can prepare it with both fresh cuttlefish and frozen cuttlefish, as we have done, and add other seafood if you want. Y add fish broth or water; although here you will notice a big difference between one result and the other.

As in almost all the rice dishes that we make, here we have also started preparing a vegetable stir-fry. The onion and pepper stir-fries add a lot of flavor to the rice so we never forget to include them. Do you also usually start cooking rice like this? Test it!

Ingredients

  • 3 tablespoons olive oil
  • 1 white onion, minced
  • 1 green Italian bell pepper, chopped
  • 1/2 red bell pepper, chopped
  • Salt and pepper
  • 400 g. cuttlefish or squid, chopped
  • 1 tablespoons of crushed natural tomato
  • 1 cup of rice
  • 1 pinch of coloring for paellas
  • 3 cups hot fish broth

Step by step

  1. Heat the oil in a saucepan and sauté the onion 5 minutes.
  2. Then add the peppers, season and sauté until all the vegetables are tender.
  3. Entonces add the cuttlefish and sauté until they change color, about 4 minutes.

  1. Add the crushed tomato and the rice and mix well. Give it a couple of turns.
  2. Then add the food coloring and boiling vegetable broth.
  3. Cook the rice over medium-high heat with the lid on for 6 minutes. Then, lower the heat and cook another 10 minutes, simmering without a lid.
  4. After time, turn off the fire and let the rice rest 5 minutes placing a clean cloth on it.
  5. Serve the fresh cuttlefish rice.
