Peanut ice cream pie

With this still hot weather, do you fancy a piece of frozen peanut pie? I invite you to dare to prepare it at home, you'll see how easy it is.

On this occasion, take a crunchy chocolate decoration. It is also spectacular with a peanut crocanti on top, which can be prepared simply with peanuts and sugar.

Ingredients:

(For a 20 cm diameter mold).

  • 100 ml. of whole milk.
  • 400 gr. of pastry cream.
  • 220 gr. peanut butter
  • 175 gr. of sugar.
  • 3 egg whites.
  • 6 gelatin sheets.
  • 100 gr. of Maria cookies.
  • 2 tablespoons of butter.
  • 3-4 chocolate bars for desserts to decorate.

Preparation of the peanut cake:

To make the cake base, we pulverize the cookies and mix them with the melted butter. To crush the cookies we can do it with a crusher or manually, putting them in a bag and flattening them with a mortar or roller. The butter can be melted on the fire or in the microwave. We distribute the biscuit and butter paste over the entire base of the mold and we put it in the freezer, while we are preparing the rest.

We soak the gelatin in a deep dish with cold water, about 5 minutes. We heat the milk and dissolve the gelatin previously soaked in it. We let cool the mixture completely.

We separate the yolks from the egg whites. We mount only the whites with some rods, together with 75 gr. of sugar. On the other hand, we also whip the cream with 100 gr. of sugar.

We slightly heat the peanut butter, not too much, just to make it manageable. We put the peanut butter in a large bowl and mix it with the whipped cream. Then we add the milk and mix again. Finally we add the whites, mix little by little and doing enveloping movements until they are integrated.

We remove the mold with the cookie base from the freezer. Pour in the peanut mousse that we have just prepared and distribute it well in the mold. We put the cake back in the freezer so that it sets.

To decorate the cake with chocolate, first we melt the chocolate following the instructions on the package. Once it is melted, we wait a little for it to harden and place it in a small plastic bag. We make a hole in one corner of the bag, press and make drawings on the frozen cake. We put the cake back in the freezer for about 10 minutes.
