If you sometimes feel the need to peck between meals, this beet pate and yogurt It will give you the peace of mind of being able to do it in a healthy way. It also costs nothing to do so and can be kept in the fridge for several days.

It is very simple to prepare and it is very attractive due to the color that the beet gives it, great for parties and surprise your guests with new ideas. It is light for the stomach, so we can also accompany it with other heavier dishes at lunch or dinner.


  • 3 beets.
  • 1 plain Greek yogurt.
  • 1-2 cloves of garlic.
  • 1 tablespoon of ground cumin.
  • 1/2 lemon.
  • 2 tablespoons of olive oil.
  • A pinch of salt and pepper.
  • Some roasted sesame seeds.

Preparation of the beet and yogurt pate:

The first thing we are going to do is cook the beets. We can also buy them already cooked in vacuum packs. We will try to make all 3 the same size so that they have the same cooking time. We cut the stems and wash them well under the tap to remove the dirt from the skin. We put the beets in a saucepan and cover them with water. We heat the saucepan over high heat and we boil them for 15 to 20 minutes. Depending on the size they will need more or less time. Once cooked, we drain them and let them cool.

Peel the cooked beets and transfer them to the blender glass. We also add the juice of half a lemon, the Greek yogurt and the olive oil. We cut the garlic clove lengthwise and we extract the germ, to avoid repetition and we incorporate it together with the rest in the blender. If we like the spicy flavor we will put 2 cloves, but in principle it is better to put only one and try.

We blend everything until a fine cream is left. Now season with salt, pepper and ground cumin. This too it goes a little to taste, so we will start by putting a little of each and we will add more if necessary. We mix with a spoon and we taste the flavor.

We already have the beet pate ready. To present it, we put it in a bowl or bowl and garnish it on top with some toasted sesame seeds and a thread of oil. Its ideal accompaniments are toasted bread, nachos, crackers or raw carrot hearts.
