If you want to look good with your guests in Christmas, with this meat stuffed zucchini recipe, you will be successful, because it is easy to prepare and it is very attractive on your table. This vegetable is suitable for many types of preparations. In particular, the round ones are ideal to fill with a variety of combinations.

The amounts in this recipe are for four persons. Generally, one zucchini per person is sufficient, since its size is perfect and allows space for a filling that satisfies any palate. Next we will tell you the ingredients and how to prepare them.

Ingredients:

  • 4 round zucchini.
  • 500 grams of minced meat.
  • One medium onion, chopped.
  • 1/4 of chopped red pepper.
  • 1/4 of chopped green pepper.
  • A ripe tomato without skin, chopped.
  • 4 tablespoons of grated cheese (which melts).
  • Egg.
  • A tablespoon of olive oil.
  • Salt to taste.
  • Black pepper to taste.

Preparation of the zucchini stuffed with meat:

First we will wash the zucchini. Then, we put them in boiling water for about three minutes. We carry out this operation to soften a little these vegetables, in order to facilitate their emptying, since we will use their pulp to make the filling.

Once these have cooled we proceed to cut the upper part, which will have the function of serve as cover. With a teaspoon we remove its pulp. We place the pulp in a strainer to release water. Next, we put each zucchini upside down so that it releases water.

In a frying pan add the olive oil, the onion, and the peppers with a little come out so they sweat. Then, we add the tomato and stir from time to time. Once the vegetables are semi-cooked, add the meat and cook for ten minutes. We incorporate the pulp that we had reserved together with the mixture from the pan and season. Cook over low heat for ten more minutes.

We are filling each piece with the preparation to which we have incorporated the beaten egg. We will cover each stuffed piece and put them in the oven for 15 minutes at a temperature of 180 ° C. As a last step, we gratin them, removing the covers and adding the cheese to melt.
