The intense and smoky flavor of Idiazábal cheese brings a very special touch to this green salad that we propose today. A simple green salad in which you can include different tender and sprouted shoots to adapt it to your personal tastes.
Beyond the chosen base, Idiazábal cheese is the undisputed star of this salad. Made in the Basque Country and Navarra entirely with sheep's milk from the Latxa and Carranzana breeds, it has a intense taste and smell and it leaves a very characteristic persistent aftertaste, which we particularly love.

Ingredients
- Lettuce for two or a bag of baby sprouts
- 100 ml of cream for cooking
- 80 + 20 g, Idiazábal cheese
- Sal Island
- black pepper
- 3 tablespoons of fried corn
Step by step
- In a saucepan he carries the boiling cream.
- When it starts to boil, remove from heat and incorporates 80 g. of cheese diced. Let it infuse until the mixture cools.
- Meanwhile, clean lettuce, drain it and place it as a base on two plates or bowls. Incorporate the rest of the cheese into dice.
- Also take the opportunity to mash the fried corn in a mortar or food processor. Reservation.
- Once the cream is cold, blend until you get a Thick sauce and season.
- Sprinkle the salad with the sauce and sprinkle the fried corn above.
