There are many ways to cook rice; in Bezzia We have prepared numerous recipes with this cereal as the protagonist. This, however, it has a more exotic tint than any of them thanks to the combination of vegetables, nuts and spaces.

Onion, zucchini and garlic serve as the base of this great rice dish to which we have also incorporated dates, raisins, roasted cashews and a spice mix Very exotic as is the tajine mix. A mixture that combines ras el hanout, turmeric, coriander, pink berry, ginger, cumin and cinnamon, among other spices. Do you dare to try it?

Ingredients

  • Extra virgin olive oil
  • 50 g. natural or roasted cashews
  • 160g of rice
  • 1 garlic clove, minced
  • 1/2 onion, minced
  • 1 small zucchini, diced
  • 2 dates, minced
  • 10 raisins
  • 1/2 teaspoon Tajine mix
  • salt and pepper
  • Parsley

Step by step

  1. Cook the rice in plenty of salted water for 10 minutes. Afterwards, cool it under the stream of cold water and reserve it.
  2. While the rice cooks, roast the cashews if these natural. To do this, brush a frying pan with olive oil and sauté the cashews until lightly browned.
  3. Then, in that same pan, add a tablespoon of oil and sauté the onion and garlic for two or three minutes.
  4. Add the zucchini, season and cook over medium-high heat for 5 min.

  1. Now, add the cashews, dates and raisins and mix.
  2. To finish, add the cooked rice and spice mix. Cook the whole for a couple more minutes and sprinkle with parsley at the last minute.
  3. Serve the zucchini fried rice with hot tagine.
