This surimi, cucumber and corn salad It is a very simple recipe that you can prepare at any time. It is even inexpensive and low in fat, since the rich sauce it contains is prepared with natural yogurt, making it a light recipe.

Surimi or crab sticks are very convenient to use in salads or also in the pan, since it is already cooked and cuts easily. It also admits a great variety of flavors, being able to make different combinations. So, if we feel like it, we can also vary the ingredients of this salad to our liking.

Ingredients:

  • 3 cucumbers.
  • 6 bars of surimi.
  • 5-6 tablespoons of sweet corn.
  • 2 natural yogurts.
  • 1 tablespoon of olive oil.
  • 2 tablespoons of chopped fresh parsley.
  • 1 clove garlic.
  • 1 teaspoon of dill.
  • The juice of half a lemon.
  • Salt to taste.

Preparation of the surimi, cucumber and corn salad:

We peel the cucumbers and cut them into slices, which we will later cut into quarters. We can also dice it if we like it better. We place the cut cucumber in a large bowl, where we will prepare the salad.

We cut later the surimi bars or crab sticks thinly sliced ​​and put in the bowl. We will also add a few tablespoons of sweet corn kernels.

Now let's make a very easy yogurt sauce, which will be in charge of flavoring our salad. We will start by peeling the garlic clove and crush it with a mortar. If we do not have mortar, we can crush it with the handle of a knife and then chop it very finely.

We pass the crushed garlic a container, where we will add the natural yogurt, the dill, the chopped parsley, the lemon juice, olive oil and a pinch of salt. We move with a spoon to mix the yogurt sauce.
