We had not prepared any coca salt so far in Bezzia and we wanted to do it. We have opted for one flat coke with a salty filling simple in order to focus attention on the dough. A cake of cherry tomatoes with onion.
Coca, which is consumed mainly in the spanish mediterranean coast, is prepared from a bread dough. A very simple dough that, after rising for an hour, provides the base for the filling. A filling that in the case of salty ones can contain vegetables, fish, sausages...
Do not be afraid of the dough! Unlike some bread doughs, this one is very simple and you will not need to be skilled with the kneading to prepare it. All you have to do is mix all the ingredients in a bowl. Do you dare to prepare it?

Ingredients
- 200 g. whole spelled flour
- 150 ml. warm water
- 5 g. fresh baker's yeast
- 40 ml. of extra virgin olive oil
- 1 teaspoon of salt
- 1 teaspoon garlic powder
- a pinch of oregano
- 1 white onion
- 1 handful of cherry tomatoes
- flake salt (optional)
Step by step
- dissolve yeast in the warm water.
- Then, with the help of a spatula mix the flour in a bowl, water with yeast, oil, salt and garlic powder.
- Once done, cover it and let it rest at least an hour and a half in a warm place, without currents. Inside the oven, for example.
- Time passed preheat the oven to 200ºC and line the baking tray with parchment paper.
- Pour the dough onto this tray and shapes coke using your fingers to stretch the dough.
- Then add the onion on top julienned, the cherry tomatoes cut in half and a pinch of oregano.
- Drizzle with a splash of oil extra virgin before taking it to the oven.
- Bake the coca 25 min at 190ºC or until the dough is golden.
- Then take it out of the oven, sprinkle a few flakes of salt and enjoy the cherry tomato cake.
