These almond cookies with jam apricots are very simple to prepare, so much so that you will never be lazy to bake them. The cookies are based on oatmeal, almond and olive oil and are spiced with a pinch of turmeric and a pinch of pepper. They do not have sugar among its ingredients sugar or any other sweetener. Ingredients
- 1 cup of oatmeal
- 1 cup of ground almonds
- 8 pitted dates
- 5 tablespoons of extra virgin olive oil
- 1/2 cup of almond drink
- 1/2 teaspoon turmeric
- 1 / 4 teaspoon black pepper
- 2/3 teaspoon baking soda
- Apricot jam
Step by step
- Soak the dates in hot water for 5 minutes. Then drain them and reserve.
- Pre-heat the oven at 180ºC and line the baking tray with parchment paper.
- In the blender glass, place all the ingredients except the apricot jam. Shreds up achieve a homogeneous dough.
- Grease your hands lightly and form balls about the size of a walnut with small portions of dough. Place them on the baking sheet, keeping some distance between them.
- When you have finished with the dough, using your index finger, press down on each of the balls to create a hole in the middle.
- Stuffed with jam each hole and bake the cookies for 20-25 minutes or until golden brown.
- Take them out of the oven and let them cool on a rack before storing them in a airtight container.
